the best enchiladas. ever.

Sorry Mom! But these were gooood! I don't know if it's because initially, I had low expectations; I'd never had a sour cream-based enchilada sauce. The combination of the sour cream and roasted tomatillos was perfect. I recommend using fresh tomatillos if you have access to them. Our grocery store was out of serranos so I used half of a jalapeno, deseeded. Check out the recipe on the Homesick Texan's blog, one of my new favorites!

The boys gobbled them up before I could take a picure. So instead, you get a picture of that handsome hunk I married!

  1. i heart sour cream enchiladas... big time. now that you've got me thinking about food, i grew up in new mexico so i also like to put green chile on everything. literally, everything.
