Sorry Mom! But these were gooood! I don't know if it's because initially, I had low expectations; I'd never had a sour cream-based enchilada sauce. The combination of the sour cream and roasted tomatillos was perfect. I recommend using fresh tomatillos if you have access to them. Our grocery store was out of serranos so I used half of a jalapeno, deseeded. Check out
