Cinnamon Rolls and My Wacky Destress Methods



Work has been really stressful lately and I really look forward to unwinding on the weekends. You want to know what helps me take my mind off of things sometimes? Making up laughs like one would make up different accents. Ok, before you think I'm totally off my rocker, hear me out. First, you could laugh like a raging lunatic, then a really deep laugh, maybe some with hiccups and anything you could think of in between! I know it sounds crazy, but sometimes all you need is a good laugh to feel better!!


You have to try it sometime, very loudly. And please do me a favor and record it and post it on YouTube - well for my entertainment of course.


Ah yes, now back to serious business - this past Friday was a cold and wet one. All day, the Husband and I stayed bundled up in the warmth of our house. I decided it was a good day to make us some cinnamon rolls and dusted off the old bread machine.




So what did the taste-tester think?


"Mmm, these babies won't last long!"


Cinnamon Rolls
recipe from here
1 cup warm milk (110 degrees F/45 degrees C)
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast

1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened

1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.

2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
3. Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.

One Sweet Day: Here Comes the Bride


Dad and I were waiting on the porch and when we heard my music start, it was time for us to walk down the aisle.

Hubs was smiling, waiting for us to get there. It took a lot of will power not to run straight to him.

At this moment cherishing the special moments we've shared, I gave my dad the biggest, tightest hug my body would allow me.

His dad and stepmom looked on lovingly

My dad gave a few words of kindness, most of which I don't remember but essentially, it was that he and my mom really liked Hubs from the day they met him and they couldn't be happier than to see their daughter with this wonderful young man.
After my dad as seated, I took a look around just amazed and overjoyed that all of these people where here for us.

One Sweet Day: The Ceremony Begins

After the guests were seated, the music started and Hubs and our pastor walked out.

Once they were in place, the hubs' wonderful Stepmom was walked out,
followed by my beautiful Momma.

The bridal party couples followed, as they each got their moment to shine!


And they, along with guests, patiently waited for the bride and her father.

One Sweet Day: Couples Pics

This was one of the only times we had alone throughout the entire day, well except for Jenny being there to document it! It was really hard to narrow down which pictures to share, our photographer took so many great shots! Here are a few of my faves:

The six or 8 months leading up to the wedding, my co-workers would always tell me, "there's still time" meaning, "there's still time to back out if you change your mind" so here I am giving hubs one last tease of this phrase we grew so fond of hearing :)

To which he responded, "Come here you!"


Gloria's Aussie, Maddie, snuck in a few of the pictures. We didn't care because we love Maddie! We always tease Gloria she better keep an eye after we leave because we may just sneak Maddie in our truck with us!

After 2 trips to the hospital and a very long day in the waiting room with my cousins, my dad came out of the double doors holding a bundle of joy in his arms wrapped tightly in a blanket. Not knowing if it was a boy or a girl, I stood on my very tippy toes secretly hoping I would see a baby sister rather than a brother in his arms. 18 years ago today, with a sweaty tank top and a glisten in his eyes he proudly leaned over and introduced me, "Mireya, this is your new sister Kathryn."


Happy Birthday Sissy! I love you!

Pumpkin Patch!

Hubs and I bundled up (it was 40 out) and drove over to the pumpkin patch to pick out some decorations for the front of our house this fall! Although it was chilly and windy out, we still had lots of fun!

Here goes!

1. I was a band/choir geek to the extreme in high school. Marching band, chamber choir, wind ensemble, pep band, jazz choir, jazz band, symphony orchestra, the list goes on and on. The biggest highlight was marching in the Rose Parade! Can you find me or any of 3 of my bridesmaids in this picture (hint: 2 of them are in the front row). I'm kidding, this picture is so small, I'm not sure where I am myself!



2. I get the music thing from my dad. He was in a band that played Spanish since before I was born until about the time I hit high school. He traveled a lot on the weekends playing gigs around the Pacific NW. These days, he just jams on his guitar at home.



3. I have had braces twice. The first time for 8 months (yeah baby!) and the second time for 2 months (orthodontics fault). I use to brag that even adding those both up, it was still considerably less time than what people typically wear braces. But I served my time...my teeth were BAD.


4. I have struggled with my weight my whole life. At my peak, I was pushing 190 (and I'm 5'4").


5. I have never broken a bone or had stitches due to an injury. My husband on the other hand has a long track record of injuries.


6. I had to have my teeth brushed and be in bed by 9:00 PM sharp while growing up. To this day, I have a really hard time staying up past that.


7. My favorite drink for the past few years is a White Mocha Americano with a lil' cream. Good hot or iced! Tasty!!
